Check out these little beauties! I remember as a child having no idea how the jam got inside the doughnuts. When I found out how the jam is injected into the doughnuts at the bakery or the supermarket, it seemed like the best job in the world! Marmalade Cake Disaster!

A friend gave me a jar of yummy homemade marmalade. At the moment I'm not much of a toast for breakfast kind of girl, but I'm ALWAYS a cake girl, so marmalade cake seemed like the fitting way to use the marmalade. Sadly something went a bit wrong........ The cake that had been rising so beautifully went in minutes to this sunken burnt mess. The Jam Diaries – an after thought.

Due to a somewhat over zealous use of apples for my jam, I ended up with a yield rather to big for my small collection of jars. My big pan was left sitting on the stove with rather too much jam sitting in the bottom of it to happily throw away. As an emergency measure I popped the left over jam into a glass bowl, covered it in cling and left it in the fridge.
