Chicken and Ham Tangle Pie

img_3405.jpg

I first came across this amazing pie on a fantastic baking blog - The  Cake Hunter. Her pictures, of a beautiful crispy filo topping and a delicious creamy filling, sold me instantly. I had to have that pie! I first made it for a group of four big hungry men and it disappeared in minutes. So fast in fact I'm sure I didn't get my fair share! I just had to make it again last night, although this time it was only to feed two of us so I halved the recipe. The recipe below is for the full pie, which ...

Guinness Cupcakes

img_33651.jpg

It seems everyone is having a 'dry January' this year. Girl chats over a bottle of wine have been replaced, much to the barman's dismay, with diet cokes all round. Saturday night cocktails are on hold until February. Gin and Tonics on ladies nights have been substituted with pyjamas and blankets on the sofa. Not that I'm an especially big drinker. Yes, I do love a good glass of red after a long day, and there's nothing quite like an ice cold beer sitting out in the sun, but I don't need alcohol ...

Blueberry and White Chocolate Cookies

Tomorrow I've got a big interview coming up for a teaching position. For the interview I'll have to give a teaching demonstration to a larger, and younger, class than I've ever taught before. I've trawled through pages and pages of internet advice and videos, I've practised my nursery rhymes and honed the finger movements to Incy Wincy Spider. Now I'm just ready to get it over with. So today, instead of panicking about whether I needed to make puppets,or imagining myself sobbing as two year olds ...

Cookies and Cream Cupcakes

img_3344.jpg

There are many fantastic things about living by the beach in Hong Kong. Sunshine, fried rice, lying in bed listening to the waves, wearing flip flops in January.... However there are some things that just aren't so great. Cleaning gecko poo of the walls and tourists peering in the windows on a Sunday afternoon are prime examples. The thing that perhaps annoys me the most though is my oven. Or perhaps more correctly lack of oven. I do have something which claims to be an oven. It's about the size ...

Cookie Dough Brownies

img_2412.jpg

A little slice of heaven..... I'm finally getting to grips with the Hong Kong kitchen and getting back to baking. As a proud owner of a mixing bowl, muffin tin and brownie tin I'm once again ready to go This recipe has been on my mind for a while, it was defiantly worth waiting for. Thick, rice, fudgey brownies topped with a generous layer of chocolate chunked cookie dough. It's the sort of brownie that cries out to Mr Ben and Mr Jerry to turn it into an ice-cream. Cookie Dough ...

Two cakes and a long haul flight

img_1414-e1301110497176.jpg

So, I have some BIG news. This morning I landed into Hong Kong to begin my new life as an English teacher. It’s a long story, but one that mainly hinges around that fact that a relationship conducted across an 8 hour time difference just isn’t that fun. I’m sat in Starbucks (for as taste of the local culture!) as part of my stay-awake-until-night campaign eating something called an ‘italian sausage stick’. So far I’m unconvinced it has little to do with either Italy or sausages..... Dubious ...

Marmalade Cake Disaster!

img_1305.jpg

A friend gave me a jar of yummy homemade marmalade. At the moment I'm not much of a toast for breakfast kind of girl, but I'm ALWAYS a cake girl, so marmalade cake seemed like the fitting way to use the marmalade. Sadly something went a bit wrong........ The cake that had been rising so beautifully went in minutes to this sunken burnt mess. It was 15 minutes before the end of the suggested cooking time so I'm a little bit flummoxed. The batter was very sticky with lots of golden syrup and ...

Raymond Blanc’s Lemon Cake

img_1288.jpg

Feeding my telly chef addiction.... Yes, I've found another one to adore. This time in Raymond Blanc and his kitchen secrets that   has got me hooked. Raymond reveals recipes from across his career and tells the humble viewer how to master them at home. I admit, at times these recipes are of the kind that quite frankly you would need a professional kitchen, or at least a very empty social life and hours of patience and skill, to make. The metre tall French celebration cake, the Piece Montee ...

Cookies and Cream Brownies

img_1060.jpg

I'm a self-confessed food programme addict. I love watching people cook, I love watching the beautiful food, I love hearing people talk about food. Sometimes I'm inspired to cook the recipes, sometimes I rush online to make a shopping list for ingredients, other times I just like to gaze in adoration at the food I know I'll never make. Nigella Lawson, Jamie Oliver, MasterChef; I'm not fussy.Watching is like eating huge steaming plates  of comfort food without the calories or the guilt.  I've ...

The Jam Diaries – an after thought.

img_1050.jpg

Due to a somewhat over zealous use of apples for my jam, I ended up with a yield rather to big for my small collection of jars. My big pan was left sitting on the stove with rather too much jam sitting in the bottom of it to happily throw away. As an emergency measure I popped the left over jam into a glass bowl, covered it in cling and left it in the fridge. Obviously this is less than ideal, and not the way for the jam to really show of its powers of preservation. Happily the excess jam gave ...
