Happy World Nutella Day! The 5th of February is World Nutella Day – a big day in my calendar!

Did you see the Nutella riots that happened in France a couple of weeks ago? A french supermarket reduced the price of its Nutella by 70% and shoppers went crazy for it. There were reports of violence as people rushed to grab the cheap jars of their favourite spread, with shoppers pushing and shoving each other out the way to grab their prize! Apparently stocks completely sold out within 15 minutes. Pure madness of course, but a testament to the love of Nutella!

It seems here in the UK we love Nutella almost as much as they do over in France. There’s just something about that sweet, nutty, chocolate spread that we can’t get enough of. It’s perfect on pancakes, baked into cakes, swirled into cheesecakes, spread liberally on toast, or even just licked off a spoon. My Fererro Rocher and Nutella Cupcakes are always one of the most popular recipes on my blog. That Nutella buttercream always gets such good feedback!

These brownies are a dreamy bake if you’re a Nutella fan. They have a base of cocoa brownies, which I think are the easiest brownies to make, but they are completely delicious to eat! They’re then topped with a layer of cheesecake, swirled with Nutella and dark chocolate chips.

I really love this brownie recipe. The cheesecake and Nutella topping is just so good. It’s simple to make. You whip up cream cheese with sugar, vanilla extract and an egg and pout it over your uncooked brownie batter. Swirl through your Nutella, sprinkle on some dark chocolate chips, and you’re ready for the oven. As the brownies bake the cheesecake sets up into something like a layer of New York cheesecake. It’s creamy, light, and oh so very moreish!

Ingredients
  • ----- for the brownie layer
  • 220g butter
  • 170g caster sugar
  • 150g soft brown sugar
  • 95g cocoa powder
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 130g plain flour
  • ---- for the cheesecake layer
  • 300g full fat cheese, softened
  • 50g caster sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 100g nutella
  • 75g dark chocolate chips
Method
  1. Preheat the oven to 180C / 160C fan / 350F.
  2. Lightly grease and line a tin that is approximately 18 x 26cm, or an equivalent sized square tin.
  3. Begin by making your cheesecake layer. Beat the cream cheese until softened and smooth. Add in the sugar, egg, and vanilla extract and continue to beat until well combined. Set aside while you make the brownie batter.
  4. To make the brownies, weigh the sugars and the cocoa powder into a bowl and set aside.
  5. Place the butter into a large saucepan and begin to heat over a low heat. When the butter is about half melted, add in your sugars and cocoa powder and continue to heat, stirring constantly until all the butter is melted. At this point you'll have a grainy, thick liquid.
  6. Remove from then heat and allow to cool for about 5 minutes. Beat in the vanilla extract followed by the eggs. As you beat the eggs in you will see the batter begins to become smooth and silky.
  7. When the eggs are fully combined, beat in the flour. Pour over your prepared brownie batter.
  8. Pour the cheesecake mixture over the top of the batter. Spoon your Nutella on top in evenly spaced blobs, then use a knife to gently swirl it through the cheesecake mixture. Sprinkle over your chocolate chips.
  9. Bake in the centre of the oven for about 30 minutes until the cheesecake is just firm and starting to colour.
  10. Cool the brownies completely in the tin.
  11. Once cool, melt the dark chocolate and drizzle over the brownies. Cut into 12 squares.
