Happy New Year! I hope you all had a wonderful Christmas and new year. We had a very quiet New Year’s Eve. I only saw midnight because Tilly had me up for a night feed! Still, it was quite special to wake up on New Year’s Day to a brand new year with our tiny person.

I’m looking forward to an exciting year for this blog. I’ve got lots of recipes lined up, and lots of ideas for bakes to bring you. I can’t wait to get baking!

I closed the year with my round up of my top recipes of 2017, and now I’m back with my first recipe of 2018. I’m kicking off the year with a delicious new blondie recipe.

Following on from my bourbon biscuit brownies last year, I’ve been experimenting with lots of other biscuity brownies and blondies. Custard creme blondies, of course, had to be one of the first experiments!

Biscuit brownies and blondies work surprisingly well. You’d have thought the biscuits would either burn and become crispy in the oven, or end up soggy from the batter, but they don’t! I’ve also got a jammy dodger blondie recipe coming up soon, so keep your eyes open for that, and do let me know if you’ve got a favourite biscuit you think would work well in a bake!

The batter for these blondies is made with Birds custard powder which gives them a delicious custardy taste. The smell of the custard powder alone is pure nostalgia for me, so I loved the smell of these as they baked! My whole kitchen smelled so incredibly tempting.

The texture is beautifully gooey – just ever so slightly under baked to give the perfect amount of squidge! The texture gives a perfect contrast to the crunch of the biscuits on top.

The blondies have got big chunks of white chocolate running through them. You can use white chocolate chips if you like, but I prefer to roughly chop a bar of chocolate. That way you get lovely big chunks of chocolate that don’t melt into the blondies as they bake.

Buttery, chocolatey, custardy heaven!

Notes

– Like with brownies you want to take your blondies out the oven when they’ve still got a little bit of wobble. You’re aiming for the top to be golden and set, and an inserted skewer to come out almost clean.

– Make sure you let your blondies cool completely before you try and cut them. If you want neat edges it’s best to pop them in the fridge for half an hour or so before slicing.

– You can break up the custard creams, or leave the whole on the top of the blondies. I think a mixture of the two looks nice.

Ingredients
  • 160g butter
  • 200g white chocolate, broken into squares
  • 200g plain flour
  • ½ teaspoon baking powder
  • 4 tablespoons custard powder
  • pinch salt
  • 2 large eggs
  • 165g soft light brown sugar
  • 75g caster sugar
  • 1 teaspoon vanilla extract
  • 140g custard cream biscuits
Method
  1. Preheat your oven to 180C / 160C fan / 350F.
  2. Lightly grease a rectangular tin thats approximately 18 x 26cm and line with greaseproof paper.
  3. In a small pan, melt your butter over a low heat. Once the butter is melted, leave to stand for about 2 minutes, then add in 100g of your chocolate and stir until its all melted. Leave to cool slightly while you prepare the rest of the batter.
  4. Put your flour, baking powder, custard powder, and salt into a large bowl and gently whisk together to combine.
  5. In a separate bowl, whisk together your eggs, sugars and vanilla extract until combined and a little frothy. Pour in the melted butter and chocolate mixture and mix together.
  6. Add the wet ingredients to the dry, and mix until you've got a smooth batter. Stir through the remaining 100g of chocolate, then pour into your prepared tin. Gently press your custard creams into the top of the blondie batter.
  7. Bake in the centre of your preheated oven for around 22 - 25 minutes, until the top is crackled and golden, and the blondies are feeling reasonably firm to the touch.
  8. Take your blondies from the oven, and leave to cool completely in the tin.
  9. Once the blondies are cool, its best to pop them in the fridge for a couple of hours still in the tin to firm up before slicing.
  10. Once they are sliced, store at room temperature.
