A friend gave me a jar of yummy homemade marmalade. At the moment I’m not much of a toast for breakfast kind of girl, but I’m ALWAYS a cake girl, so marmalade cake seemed like the fitting way to use the marmalade.
Sadly something went a bit wrong……..
The cake that had been rising so beautifully went in minutes to this sunken burnt mess. It was 15 minutes before the end of the suggested cooking time so I’m a little bit flummoxed. The batter was very sticky with lots of golden syrup and marmalade so I’m wondering if this has something to do to it.
Luckily the cake inside was a lovely, moist orangey sponge. The texture was similar to a steamed pudding, very soft but still light and wet. Once I’d hacked off the burnt crust I was able to cut the taste into decent slices of cake. I was still disappointed not to see the cake iced and topped with orange zest looking beautiful but I think the people I fed the cake to didn’t realise the disaster it had been salvaged from!
